The Chardonnay grapes for this Blanc de Blancs come from a steep vineyard, characterized by marl, on the Kogelberg near Leibnitz. 72 months of yeast aging give this sparkling wine plenty of time to develop. It results in a Blanc de Blancs with an extremely fine mousse, an intense aroma of yellow-fleshed fruits and brioche. On the palate, it is salty, taut, and finely structured, with intense minerality in the finish. Sparse yet incredibly complex at the same time.
In the finish, Hannes, as with the 14/84, uses the Double-Zero method: Zero sugar and zero added sulfur.
